Enough of the festive season food, we got you covered with Flynn's simple take on a salad he always makes at home.
"This salad is super quick and delicious. I usually use a couple of heads of chicories as the greens. The vinaigrette is 1 shallot chopped very fine, a big spoonful of grainy mustard, 50 ml cider vinegar, a spoonful of any chopped herb, I usually use oregano, a small spoonful of honey, a pinch of salt, and 100ml olive oil. I soak the chopped shallot in the vinegar for 30 minutes to take away the raw onion flavor then mix everything quickly before tossing it with the lettuce."

METHOD:
1. Wash a couple of heads of chicories
2. Make the vinaigrette; 1 shallot chopped very fine, a big spoonful of grainy mustard, 50 ml cider vinegar, a spoonful of any chopped herb (Flynn usually use oregano), a small spoonful of honey, a pinch of salt and 100 ml olive oil.
3. Soak the chopped shallot in the vinegar for 30 minutes to take away the raw onion flavor
4. Mix everything together
5. Mix the vinaigrette with the lettuce and serve
